About Colette's Collection
These receipes are from my mother who grew up on a little island called Mauritius. We moved to Australia in 1968 and mum wanted to introduce people to Mauritian cuisine. She taught me all her receipes while I was growing up at home. She always wanted to start a little business but passed away before she could fulfill her dreams. I made the decision that I would start a business with her namesake so her receipes and memories would not vanish with her passing. She had so many dishes, so I thought I would start with her chilli paste, she had 52 different flavours of paste. I decided to release a few to start with.
